Summary
Our client, An Vietnamese, is a family‑run Vietnamese restaurant in the heart of Warragul, operated by D&A Pham Pty Ltd. They are seeking a skilled Head Chef to lead the kitchen team, bringing creativity and consistency to the authentic Vietnamese menu and casual dining experience.
Responsibilities
* Plan and direct food preparation methods, including seasoning and cooking, to meet recipe specifications and ensure consistent quality.
* Accommodate dietary and special requirements in all food preparation and cooking processes.
* Monitor the quality of ingredients and finished dishes at all stages, from preparation and cooking to final presentation.
* Design and innovate menu items, creating standardised recipes and dishes that authentically represent the signature flavours of Vietnamese cuisine.
* Contribute to menu planning and assist in forecasting ingredient requirements to maintain cost‑effective kitchen operations.
* Establish and maintain food presentation standards to uphold the restaurant's unique visual and culinary identity.
* Supervise, train, and mentor Cooks and other kitchen staff in food preparation procedures, cooking techniques, and recipe adherence.
* Demonstrate and instruct staff on safe and efficient cooking methods to standardise kitchen operations.
* Coordinate with the Restaurant Manager and Front‑of‑house team to ensure seamless service delivery and resolve any operational issues.
* Enforce and maintain the highest standards of food safety and hygiene throughout all food handling, preparation, and storage stages.
* Oversee the maintenance of kitchen cleanliness, ensuring compliance with restaurant policies and local health regulations.
* Manage the correct storage of food items, including accurate labelling, dating, and systematic stock rotation (FIFO) in temperature‑controlled environments.
* Support management in implementing Workplace Health & Safety procedures, including hazard identification, safe operating protocols, and the proper use of protective equipment
Qualifications
* A relevant Diploma Degree
* At least three years' relevant experience in a chef role specialising in Vietnamese cuisine.
* Genuine passion for creating and cooking food, showcasing creativity and a commitment to high‑quality standards.
* Time management skills to efficiently prioritise and manage tasks in a fast‑paced environment.
* Organisational ability to maintain a clean and tidy workstation.
* Reliability and consistency in performing duties to the highest standard.
* Multitasking capability to handle various tasks simultaneously.
* Calmness under pressure, with the ability to perform effectively during peak service times in a high‑paced kitchen.
* Strong teamwork skills, contributing positively to the kitchen team.
* Adaptability to learn new techniques and adjust to new environments and workflows.
* Proficiency in working across multiple sections of the kitchen, including prep, larder, mains, and functions.
* A commitment to maintaining hygiene, food safety standards, and overall efficiency.
