Key Responsibilities
* Maintain impeccable hygiene and food safety standards across all kitchen operations
* Prepare and present high-quality sushi, sashimi, and hot dishes with consistency and attention to detail
* Uphold and actively promote portion control, quality control, and waste minimisation practices
* Support the delivery of exceptional food experiences for daily service, peak periods, and special events
* Collaborate across multiple kitchen outlets to ensure seamless and efficient operations
* Monitor food quality, storage, and stock levels in line with established procedures
* Ensure all dishes are prepared in accordance with standard recipes and presentation guidelines
* Assist in training, mentoring, and developing junior kitchen team members
* Maintain a clean, organised, and safe working environment in line with WHS standards
* Contribute to a positive, professional, and high-performing kitchen culture
What You'll Bring
* 2–5 years' experience in a high-quality, fast-paced kitchen environment
* Demonstrated expertise in Japanese cuisine, with a strong focus on sushi and sashimi preparation
* A genuine passion for precision, consistency, and presentation
* Solid understanding of food cost control, production efficiency, and waste reduction
* Strong organisational skills with the ability to perform under pressure
* Excellent communication skills and the ability to work collaboratively within a team
* A proactive attitude with a strong work ethic and attention to detail
* Confidence in supporting and guiding junior team members
* Certificate III or IV in Commercial Cookery (essential)
