Martha's is a thriving café and bakery in Wareemba with a strong reputation for quality, craft, and consistency. We're seeking a Senior Pastry Chef with exceptional lamination skills to support and elevate our pastry and viennoiserie program.
About You
You're an experienced pastry professional who truly understands lamination, from dough development and fermentation to butter quality and final bake. You lead by example, value consistency, and take pride in producing pastries that are technically excellent and visually refined.
You're comfortable setting standards, refining processes, and guiding others, while maintaining daily hands-on production.
You'll be a great fit if you:
* Have 5+ years' experience in pastry, with a strong focus on lamination
* Are highly skilled in croissants, danish, and viennoiserie
* Understand production planning, dough schedules, and workflow efficiency
* Have a meticulous eye for detail and consistency
* Can lead, mentor, and upskill junior pastry staff
* Work cleanly, calmly, and with intention
* Are passionate about technique, quality ingredients, and continuous improvement
Your day-to-day will include:
* Leading laminated pastry production from start to finish
* Managing dough schedules, lamination, shaping, baking, and finishing
* Maintaining quality, consistency, and presentation standards
* Training and mentoring junior pastry staff
* Supporting R&D, seasonal specials, and product evolution
* Ensuring cleanliness, food safety, and equipment care
