The EQ Hotel is a new luxury hotel opening in the heart of Perth. We are seeking an experienced
Director of Food & Beverage
to provide strategic, financial, and operational leadership across all food and beverage operations, including restaurants, bars, in-room dining, banquets, and events.
This is a senior leadership role for a commercially astute hospitality professional who can balance exceptional guest experience with strong financial performance, while shaping The EQ Hotel's positioning as a premium dining destination.
About the Role
Reporting to the General Manager, the Director of Food & Beverage will lead the pre-opening planning and ongoing operation of all food and beverage venues. You will establish service culture, operational frameworks, and leadership capability from day one, while ensuring alignment with approved culinary visions, brand standards, and service expectations.
This role works closely with executive culinary leadership and key stakeholders to deliver consistent, high-quality dining experiences across multiple concepts.
Key Responsibilities
* Lead all food and beverage operations across multiple outlets, banquets, and events
* Drive pre-opening readiness, including recruitment, training, SOP development, and mock services
* Champion service excellence and a guest-first culture across all food and beverage touchpoints
* Oversee financial performance, including P&L management, budgeting, cost control, and revenue optimisation
* Provide leadership across chef-led and brand-driven dining concepts, ensuring concept integrity and consistency
* Develop and coach high-performing food and beverage leadership teams
* Ensure compliance with food safety, liquor licensing, WHS, and regulatory requirements
* Act as Manager on Duty as required and collaborate closely with other hotel leaders
About You
* Minimum 5 years' experience in senior food and beverage leadership roles within upper-upscale or luxury hotels
* Proven experience leading complex, multi-outlet food and beverage operations
* Strong commercial acumen with demonstrated P&L and budgeting responsibility
* Pre-opening hotel experience highly regarded
* Confident leader with a hands-on, guest-focused approach
* Excellent communication and stakeholder management skills
