We're seeking a dynamic and experienced Bar Manager to lead the relaunch of our signature Polo Bar - an elegant, cocktail-forward venue designed to be the heart of Milton Park's social experience.
This is a rare opportunity to shape the identity of a destination bar, curate exceptional beverage experiences, and lead a passionate team in one of the Southern Highlands' most prestigious settings.
About Milton Park Country House Hotel and Spa
Due to re-open soon, Milton Park is undergoing a transformation that will showcase this luxury property to its full potential whilst honouring its long and prestigious history.
Located less than a two hours' drive from Sydney, Milton Park Country House Hotel and Spa is a hidden gem, tucked away in a secluded hilltop woodland on the eastern edge of Bowral. This 44-room hotel has an adjoining luxury wellness spa, 2 restaurants and an events and conference pavilion set within its sprawling 32 acres of lawns and gardens.
The role and key duties
* Curate a premium beverage offering, including signature cocktails, fine wines, and artisanal spirits, tailored to guest preferences and seasonal themes;
* Recruit, train, and mentor bar staff to deliver exceptional service, product knowledge, and hospitality;
* Forge loyal relationships with guests and locals to promote repeated clientele;
* Ensure compliance with RSA, health and safety regulations, and internal policies across all bar operations;
* Oversee stock control, supplier relationships, and cost management to optimise margins and minimise waste.
* Build rapport with guests and locals, fostering loyalty and repeat visitation through personalised service and memorable experiences.
* Work closely with restaurant, events, and hotel teams to support seamless service and integrated guest experiences.
* Stay ahead of industry trends, introduce new products and experiences, and continuously refine the Polo Bar's offering.
Essential criteria required to be considered
* Proven experience in bar or beverage management within a luxury or high-end hospitality environment;
* Strong knowledge of classic and contemporary cocktails, spirits, and wine (WSET Level 2 desirable);
* Leadership experience with a focus on team development and service excellence;
* Proficiency in POS systems, bar management software, and inventory control;
* Exceptional communication, interpersonal, and conflict resolution skills;
* A vibrant, guest-focused personality with a passion for hospitality and storytelling.
