We’re looking for a talented Junior Sous Chef – Pastry to join our dynamic culinary team at Novotel Sunshine Coast Resort and Convention Centre. This is a great opportunity for a pastry chef to lead across two diverse kitchens—our vibrant resort outlets, including SOLA Bar & Restaurant, and our state-of-the-art convention centre.

Job Description



We’re seeking a skilled and motivated Junior Sous Chef – Pastry to join our culinary team at Novotel Sunshine Coast Resort and Convention Centre. In this hands-on leadership role, you’ll oversee pastry production across both our resort dining outlets, including SOLA Bar & Restaurant, and our large-scale convention centre. You’ll play a key role in day-to-day operations while contributing creatively to menus and leading a high-performing team across two diverse kitchens.

What you’ll do:

* Oversee the preparation and presentation of a wide range of pastries, desserts, and baked goods across multiple service areas
* Collaborate on the development of seasonal menus and event-specific offerings, bringing creativity and consistency to every dish
* Train, mentor, and supervise junior pastry staff, supporting skill development and high performance
* Monitor stock levels, coordinate ordering, and ensure seamless kitchen workflow and prep schedules
* Maintain strict food safety, hygiene, and allergen management protocols in line with industry standards
* Assist with food cost control, portioning, and waste reduction to support overall profitability
* Promote a positive, collaborative, and high-energy kitchen environment

Qualifications



What we are looking for:

* A pastry chef with proven experience in a similar environment, preferably within the hotel industry
* Certificate IV in Commercial Cookery or equivalent trade

* Strong understanding of food safety requirements, including HACCP and workplace health and safety (WH&S)
* Proven ability to manage staffing needs, plan and delegate tasks, and motivate the team to meet daily objectives
* Service-oriented with a keen eye for detail and excellent time management skills
* Ability to multitask effectively and communicate well with team members at all levels
* Flexibility to work a rotating roster, including evenings, weekends, and public holidays
