Located in the bustling heart of Sydney, The Republic Hotel is a vibrant, multi-level venue known for its great food, buzzing atmosphere, and city views. We are currently seeking an experienced and enthusiastic Chef to join our dynamic kitchen team. Key Responsibilities: Prepare and cook a variety of dishes to a consistently high standard across all service periods Work collaboratively with the Head Chef and kitchen team in developing and executing seasonal menus Ensure all food preparation meets quality and presentation standards Maintain cleanliness, hygiene, and food safety in all kitchen areas in accordance with HACCP Monitor stock levels, minimise waste, and assist with stock ordering and rotation Train and mentor junior kitchen staff and apprentices as needed Assist in maintaining kitchen equipment and reporting any maintenance needs Contribute to a positive and productive team culture in a high-volume environment Requirements: Minimum of 1-2 years’ experience in a similar chef role in a high-paced venue Trade qualifications in Commercial Cookery or equivalent Strong knowledge of modern Australian pub and bistro cuisine Excellent communication, time management, and teamwork skills Flexibility to work across a rotating roster including weekends and public holidays Sound knowledge of food safety and WHS regulations This is a fantastic opportunity to be part of a reputable hospitality venue with a strong local following and high service standards.
