Mjølner Sydney is seeking an experienced, values-driven Head Chef to lead our kitchen and deliver bold, memorable dining experiences inspired by Nordic mythology and modern Australian produce.
This is a senior leadership role for a chef who understands that great food, strong teams, and commercial discipline go hand in hand. You'll be accountable not only for what leaves the pass, but for how the kitchen performs day to day.
The Role
As Head Chef, you'll take ownership of food quality, team leadership, and financial performance. You'll lead by example, set clear standards, and build a kitchen culture where people can do their best work.
Key Responsibilities
Food & Guest Experience
* Lead the team to deliver high-quality food and memorable guest experiences consistently
* Oversee menu execution and drive menu development aligned with the Mjølner brand, seasonality, and service realities
Leadership & Team Development
* Build, lead, and retain a high-performing kitchen team
* Train and develop chefs at all levels with a focus on growth, accountability, and professionalism
* Foster a respectful, safe, and sustainable work environment
Operations & Commercial Performance
* Manage wages, rostering, food costs, and COGS to meet agreed targets
* Work closely with venue leadership to align kitchen operations with business goals
* Ensure compliance with food safety, WHS, and company policies
About You
* Proven experience as a Head Chef or Senior Sous Chef, ready to step up
* Strong people leadership skills and a calm, organised approach under pressure
* Commercially minded, with confidence in menu development and cost control
* Committed to building a positive, sustainable kitchen culture
* Lead a distinctive, well-established venue with a strong identity
* Shape menus, systems, and team culture
