Head Chef – Full-Time | YUXI KITCHEN PTY LTD (Wollongong, NSW)
YUXI KITCHEN, a busy and growing Japanese & Sichuan fusion restaurant in Wollongong, NSW, is seeking a full-time Head Chef with strong skills in both Japanese cuisine and authentic Sichuan-style Chinese cooking.
The ideal candidate will bring proven experience in preparing high-quality Japanese dishes (including hot dishes, sushi, and fusion menu items), as well as in executing traditional Sichuan recipes with authentic flavour and spice balance. This dual skillset is essential to our restaurant's menu and business model, which combines Japanese dining with Sichuan-style student meal services.

* More than 4 years of relevant work experience required for this role
Key Responsibilities:
* Hands-on preparation and cooking of both Japanese and Sichuan dishes (hot dishes, sushi, wok-based stir fries, spicy stews).
* Supervision and training of junior kitchen staff.
* Quality control and maintenance of hygiene and safety standards.
* Contribution to menu design and seasonal innovations across both Japanese and Sichuan cuisine.
* Collaboration with service staff to ensure efficient and timely service.
Requirements:
* Minimum 4 years' experience in a commercial kitchen.
* Demonstrated expertise in Japanese cuisine and Sichuan-style Chinese cuisine.
* Excellent cooking and knife skills, including sushi preparation and wok techniques.
* Strong communication and leadership skills.
* Ability to manage kitchen operations during peak hours.
* Adaptability and willingness to contribute to team success.
