Barnbougle is one of Australia's most recognised regional resort destinations, combining world-class links golf with premium accommodation and diverse food and beverage operations.
We are seeking a commercially astute and operationally disciplined Executive Chef to lead all culinary operations across the resort.
This is a senior leadership role requiring adaptability, financial rigour, and the ability to manage multiple food offerings within a dynamic resort environment.
The Role
Reporting to senior management, the Executive Chef is responsible for the strategic and day‐to‐day leadership of all kitchen operations, including:
* Signature dining restaurant
* Casual and clubhouse dining
* Large‐scale events and golf groups
* Seasonal menu development across varied service styles
The successful candidate will understand that resort hospitality requires flexibility. Service styles, volumes, and guest expectations vary daily. You must be equally confident executing high‐volume periods efficiently while maintaining consistent quality and standards.
Key Responsibilities
* Lead and manage all culinary operations across multiple outlets
* Maintain strict financial discipline including food cost control, labour management, forecasting, and purchasing
* Drive menu engineering aligned to margin targets and seasonal availability
* Build systems and structure within the kitchen to ensure consistency and accountability
* Recruit, train, mentor, and retain a high‐performing team
* Develop strong supplier relationships, prioritising Tasmanian producers where possible
* Maintain compliance across food safety, WHS, and operational standards
What We Are Looking For
* Proven experience as an Executive Chef or Senior Head Chef within a multi‐outlet venue or resort environment
* Demonstrated ability to manage food cost percentages and labour targets
* Strong commercial acumen and experience working with budgets and P&L accountability
* A structured leadership style with clear communication and performance expectations
* Adaptability – able to transition between premium dining, event service, and high‐volume periods
* A calm, solutions‐focused approach under pressure
