As Doltone House continues its exciting growth, we are seeking a passionate and experienced Chef de Partie to join our dynamic kitchen team at the iconic Sydney Entertainment Centre.

Your main responsibilities:
* Support day-to-day kitchen operations to ensure seamless service and the consistent delivery of high-quality cuisine for prestigious events at Sydney Entertainment Centre.
* Maintained exemplary standards of food safety and kitchen hygiene while contributing to a positive, collaborative working environment.
* Collaborated effectively with the culinary team to deliver exceptional dishes with precision, efficiency and creativity in high-pressure service settings.
* Assist with kitchen inventory control, stock rotation to support operational efficiency.
* Contributed to the development, mentoring and training of junior team members including apprentices supporting the growth of future culinary professionals.
Your attributes:
* Highly organised with the ability to plan, prep and execute multiple events simultaneously.
* Calm and composed under pressure, particularly during large-scale or time-sensitive service.
* Ability to work unsupervised.
* Adaptable and flexible, thriving in fast-paced and ever-changing event environments.
* Experience working to tight timelines while maintaining consistency, quality and presentation.
* Ability to work efficiently under pressure while maintaining attention to detail.
* Strong teamwork and communication skills.
* Flexibility to work varied shifts, including evenings and weekends.
Your experience:
* Proven experience as a Chef de Partie is essential.
* Previous experience working within events, catering or banqueting kitchens is an advantage
* Strong organisational skills with experience in pre-production, bulk preparation and event execution.
* Strong knowledge of food preparation, cooking techniques and presentation across relevant sections.
* Ability to run a kitchen section independently during service.
* Experience working in high-volume and/or high-end service environments.
* Solid understanding of food safety, hygiene and HACCP standards.
* Experience with stock control, ordering and minimising food waste.
* Willingness to train and support junior kitchen staff.
