This Opportunity
We are on the lookout for a passionate and experienced Head Chef who has either worked at a similar venue or holds a strong passion for Lebanese/Middle Eastern cuisine. In this role you will lead all culinary operations at Byblos Brisbane, shaping kitchen strategy, sparking creativity, empowering the team, and maintaining our high standards of food quality and operational excellence. You will work closely with the Executive Chef and Venue Manager to write the next chapter in our venue's story.
Key Responsibilities
* Lead all kitchen operations: ingredient preparation, cooking, plating, service.
* Develop and evolve menus inspired by Lebanese culinary heritage, refreshed with a modern touch.
* Monitor food and labour costs, manage inventory, forecast needs and place orders in a timely manner.
* Mentor, train, schedule and recruit a high-performing culinary team.
* Maintain rigorous food safety, hygiene and compliance standards throughout the kitchen.
* Work seamlessly with front-of-house teams and suppliers to deliver a unified guest experience.
* Adapt dishes to accommodate dietary preferences (low-salt, dairy-free, gluten-free) while sustaining flavour and quality.
* Rapidly troubleshoot staffing, equipment, supply-chain or guest feedback issues to ensure kitchen performance runs smoothly.
* Embrace additional duties as directed by the Executive Chef or Venue Manager.
What We're Looking For
* Experience in or genuine understanding of Lebanese or Middle Eastern cuisine is strongly preferred.
* Certificate III in Commercial Cookery (minimum) and Food Safety qualifications.
* At least 5 years' proven experience in a Head Chef or equivalent leadership role, preferably in a venue of comparable scale.
* Mastery of culinary techniques: grills, pastry, processors, specialty equipment.
* Strong leadership and team management capability, including mentoring and rostering.
* Excellent time management, cost control and operational efficiency skills.
* Deep familiarity with sanitation, safety and allergen standards.
* Proficient in kitchen management and administration.
