What the Senior Head Chef will do each day
A la carte Mediterranean seafood cuisine with capacity for 70 covers; functions including weddings up to 50 people sit-down; cocktail functions up to 100 guests.The venue operates Wednesday night, Thursday, Friday, Saturday (all day), and Sunday lunch. Typically, kitchen staff work 4 days on/4 days off, or 5 days on rotation. Shifts include doubles on Thursdays, Fridays, and Saturdays with Sunday lunch off.
* Lead and manage the kitchen team including sous chefs and apprentices.
* Oversee food preparation and menu execution focused on Mediterranean seafood dishes.
* Manage inventory, food cost control, and supplier relationships.
* Ensure hygiene, health, and safety compliance within the kitchen.
* Coordinate kitchen operations to support busy service including weddings and functions.
* Train and mentor kitchen staff to maintain high culinary standards.
* Work collaboratively with front of house to deliver exceptional guest experiences.
