Company: We are a popular sporting and social club ideally situated in Warragul/Gippsland only a 1-hour drive from Melbourne. We have a function room with around 310 seating capacity and a Bistro with 220 seating capacity with full-service restaurant areas. We require two full-time permanent Chefs in addition to our current team of Chefs and other kitchen staff.
Tasks & responsibilities:
- Menu planning in coordination with Head Chef resulting in dishes which are innovative and meeting customer expectation.
- Preparation and cooking of food to high standards according to recipes and portion sizes.
- Overseeing food levels, estimating food and labour costs, ordering food supplies and liaising with suppliers for delivery.
- Monitoring the quality of dishes from preparation to serving to ensure high quality of the final product.
- Assuring cleanliness and food safety standards and ensuring that kitchen complies with health and safety regulations including, sanitation, safe food handling and staff hygiene.
- Training kitchen staff members with demonstrations and procedural advice, offering guidance and feedback for improvement of performance.
- Supervising the subordinate kitchen staff for their proper and efficient performance of duties according to established culinary standards
- Managing kitchen budget and ensuring proper working order of kitchen equipment.
- Serves as a link between kitchen and front-of-house staff for the purpose of timely delivery of orders, observing dietary restrictions and special customer requests.
- Providing instructions on freezing and preserving of food.
- Consulting Head Chef on food preparation issues and finding solutions.
Requirements:
- AQF Certificate III or IV in Commercial Cookery or acceptable overseas qualification
- At least 1-year full-time experience in a similar capacity
- Ability to effectively communicate in English
- Ability to work under pressure.
- Ability to work effectively in a team.
Salary: $ 77,000 – $ 80,000 p.a. plus Superannuation
