The Fitz is a vibrant cafe and rooftop bar on the Princes Highway Bulli, open daily 6:30am-3pm. We pride ourselves on excellent coffee, a welcoming atmosphere, and high standards of food, service, and hospitality. With strong loyal locals and high season demand, we're looking for someone passionate to step into a leadership role and help maintain and grow what we have.
The Role
We are seeking an experienced cafe manager to lead daily operations and drive excellence across our busy cafe and bar. This is a hands‑on role, with a strong focus on barista work, customer service and team leadership. You will oversee staff rostering, training, and performance while ensuring smooth day‑to‑day service, high standards, and efficient cost management. The ideal candidate is a confident leader who thrives in a fast‑paced environment and enjoys working closely with and leading others.
Key Responsibilities
* Manage cafe and bar operations daily: opening, closing, shift supervision
* Make and serve coffee efficiently: confident dialling in the machine and grinder, latte art
* Oversight of staff rostering, shift allocations, and casual staff management
* Handle staff issues, sickness, and communication with suppliers, contractors etc.
* Maintain health & safety, food safety and RSA compliance
* Monitor stock levels, ordering, and inventory control
* Ensure smooth customer service and high quality standards in food, drink, presentation
* Assist with budgeting / controlling cost centres, and report on financial KPIs, sales and labour costs
Non‑Negotiable Requirements
* Demonstrated managerial / supervisory experience in a cafe or hospitality setting
* Experienced barista: comfortable working alongside other baristas and independently serving a high volume of coffee with latte art
* Valid RSA
* Strong communication, leadership and decision making ability
* Available to work 5 days a week, including peak times (weekends / public holidays)
