Salary: 78,000 plus 12% superannuation
Position : Permanent, Full time
Our client, JAT Brand Pty Ltd trading as Fusion Delights operates a busy Bathurst restaurant and takeaway serving a fusion of Thai, Indian and Middle-Eastern flavours.
The venue combines dine-in and high-volume takeaway / delivery services, and is known for flavourful curries, stir-fries, noodles and shareable mains.
Fusion Delights is looking for a motivated, hands-on Chef to lead kitchen operations at Fusion Delights.
You will be responsible for delivering consistently excellent food across the menu (Thai, Indian and fusion dishes), driving kitchen productivity, maintaining food safety / HACCP standards and supporting the growth of the business's takeaway and dine-in services.
Key responsibilities
Oversee day-to-day kitchen operations and ensure consistent dish quality and presentation.
Plan and develop menu items and weekly / seasonal specials that reflect Fusion Delights' multi-cuisine offering.
Produce accurate food and labour costings; manage ordering and stock control to meet budgets and minimise waste.
Prepare, cook and finish a wide range of dishes (curries, stir-fries, noodle dishes, tandoor / grill items, rice and sides) to recipe and time standards.
Train, roster and supervise kitchen staff; delegate tasks to maintain service pace at peak times.
Enforce strict food safety, hygiene and WHS procedures (HACCP compliance).
Inspect deliveries and kitchen equipment to ensure standards and conformance to established procedures.
Participate in menu pricing, supplier negotiations and occasional catering / special event planning.
Conduct regular quality checks and support post-shift reviews to continuously improve operations.
Minimum qualifications & experience
Certificate III in Commercial Cookery (or AQF Diploma / Advanced Diploma in Hospitality / equivalent trade qualification), or a minimum of three years' commercial kitchen experience.
At least one year recent hands-on experience as a cook / chef in a busy commercial kitchen; experience with Thai and / or Indian cuisines strongly preferred.
Current knowledge of food safety / HACCP and kitchen WHS requirements.
Skills & attributes
Strong knowledge of Asian / Indian cooking techniques (wok / toss, curry bases, spice blends, tandoor / grill where applicable).
Proven ability to manage high-volume takeaway and dine-in service while maintaining quality and presentation.
Excellent time management, organisation and team leadership skills.
Sound numeracy for costings and stock control; attention to detail for portioning and plating.
Good communication and customer-focused attitude.
