Toasting goodbye to it's wilder days of foot-stomping shenanigans, The Wild Rover is undergoing an evolutionary refurbishment. The Surry Hills institution will be unveiled as a sophisticated new dining and drinking destination - The Rover - this March.
Bringing the bustling charm of old and the sophistication of a dapper New York cocktail & wine bar, The Rover will retain its former good time feel with an added lick of polish and a chic wine bar feel - a perfect option for a bite and drink before dinner or a cocktail post meal.
With a new-look, fresh name and sparkling new interiors, The Rover will has also bolstered its wine offering with Group Sommelier Kyle Poole curating a short list of well made wines with a commitment to sustainable vineyards, favouring wineries who embrace organic and biodynamic practices. The punchy list will rotate frequently and will highlight small, up and coming producers from all around the world.
**About the Role**:
As an Assistant Manager of The Rover you will be looking after the wine service and stock management on a daily basis. No job is too big or too small working within a small close knit team
Reporting to the General Manager, the full-time role is, typically Tuesday to Saturday with a range of shifts however mostly nights. The role is a perfect platform for an experienced waiter or junior wine waiter to grow and to work in a small venue where their personality and customer focussed attitude can shine.
**Core responsibilities**:
- Maintenance of wine list including ordering, sourcing new wines in collaboration with the Group Sommelier.
- Wine service in the venue.
- Assisting the opening and closing of the venue.
- Stocktake.
- Assist in developing the wine knowledge of The Rover team.
**Essential skills & traits**:
- Clearly spoken with a friendly, professional and welcoming tone.
- Proven ability to create memorable experiences while working in restaurants.
- Serving guests food and wine with in-depth knowledge on both offerings.
- CMS (level 2 or above) or WSET (level 2 or above).
- Initiative in developing your knowledge and growth in the wine service industry.

- Experience in opening a new venue.
- Ability to run a small wine list.
