This hotel, located in one of Inner Melbourne's most iconic dining destinations, is seeking a talented and driven Head Chef to lead the kitchen team and deliver an exceptional dining experience. Reporting directly to the Executive Chef, this is an exciting opportunity for a passionate culinary professional ready to take ownership of daily kitchen operations while upholding the highest standards of quality and consistency.
About the Role
As Head Chef, you will oversee the day-to-day running of the kitchen, ensuring seamless service, strong team leadership, and outstanding food execution. You will work closely with the Executive Chef to execute menu direction, maintain cost controls, and drive continuous improvement in a fast-paced, premium environment. The menu is Contemporary Modern Australian Cuisine
and the food is rooted in modern Australian flavours — offering elevated classics alongside more sophisticated dishes that showcase premium produce. The have dry-aged beef with more than 10 cuts of beef available along with a wood fired grill and along with a sensational range of seafood.
Key Responsibilities
* Lead and inspire the kitchen team to deliver high-quality, consistent dishes
* Manage daily kitchen operations, including prep, service, rostering, and stock control
* Ensure food safety, hygiene, and compliance standards are maintained
* Support menu development and seasonal updates in collaboration with the Executive Chef
* Monitor food costs, wastage, and supplier relationships
* Train, mentor, and develop junior kitchen staff
* Foster a positive, professional, and high-performing kitchen culture
About You
* Proven experience as a Senior Sous Chef or Head Chef in a high-volume, quality-driven venue
* Strong leadership and team management skills
* Solid understanding of food cost control and kitchen financials
* Passion for seasonal produce and modern Australian cuisine
* Excellent organisational and communication skills
* Ability to perform under pressure while maintaining attention to detail
