We have an exciting role for a talented, experienced and passionate SOUS CHEF to join our team to assist the with the management of the operational delivery of multiple food outlets, restaurants and events throughout our venues.Primarily based at Rosehill gardens racecourse but the role will support the business across our five venues as required during peak periods of trade.
We are a strongly established market leader in the hospitality industry with much to offer and we work with a diverse range of small producers, seasonal produce to continuously deliver industry leading culinary experiences using the very best of what our NSW and Australian producers and purveyors have to offer. The role of Sous Chef will require you to have a versatile self-driven and motivated outlook with a strong background working in a busy, high-volume setting across multiple different food offerings with a focus on the detail.
You will be required to support and collaborate with the kitchen team under guidance from the Executive Chef to create and implement innovated menus, maintenance of our standards and expectations with a focus on quality that supports the customer experience. You will be required to work in a team and demonstrate strong leadership skills and to be supportive and understanding of a fulltime and casual workforce, mentoring and creating professional development opportunities and leading by example.
This role of Sous Chef is a FULL-TIME role, reporting directly the Executive sous chef under the guidance of our Executive Chef.

THE OPPORTUNITY
Based at Rosehill Gardens Racecourse and reporting into our Executive Chef, with the support of our executive sous chef, the Sous Chef will join an established team to deliver a wide cross-section of culinary offerings from Retail to A la Carte Fine dining across our five venues.
DAY TO DAY, THE ROLE WILL:
o Customer Experience - driving a culture of consistent customer excellence, ensuring a seamless experience
o Operational Excellence - Preparation, cook and presentation of various foods, contributing to menu concepts and recipe development as well as ensuring all aspects of kitchen functionality are maintained
o People Leadership - Supervision of the team, providing constructive feedback and driving high performance
o Finance - With the support of the Executive Chef work towards budgets and COGs
o Innovation - Contribute new ideas and ways of improving current processes
o Safety - Management of HACCP, ensure hygiene is upheld and prioritise team member safety in the kitchen.
THE RIGHT FIT
To be successful in the role, the right fit will possess:
o A strong alignment to the ATC values, Collaborate, Care, Own and Bold
o Formal qualifications in Commercial Cookery
o 5+ years' experience working in a large-scale business / business with multiple venues
o Knowledge of current food prep and food service management, methods and techniques
o A solid understanding and application of relevant legislation
o Demonstrated experience supervising, mentoring and driving teams
o Exposure to working to and/or managing COGs
