Delaware North Australia has a rare opportunity for a talented Chef De Cuisine - Production to join our culinary team at the Melbourne Cricket Ground (MCG).
The MCG is the largest sporting stadium in the Southern Hemisphere, hosting AFL games, international cricket, concerts, and exclusive events.
We are seeking a dynamic and experienced Chef de Cuisine to lead our busy production kitchen, overseeing up to 60 chefs per shift. You will bring high-end culinary skills and large-scale production experience, along with strong commercial acumen, to thrive in this fast-paced environment.

Responsibilities
Manage daily operations of the MCG production kitchen
Develop innovative menus aligned with current food trends and guest preferences
Lead, mentor, and train a motivated culinary team
Maintain high food standards through efficient systems
Assist in managing budgets, food costs, and utilize IT systems for efficiency
Manage performance and labor costs for kitchen staff
Ensure food safety and HACCP compliance
Candidate Profile
Proven experience managing large-scale kitchens
Strong leadership and team inspiring skills
Expertise in menu development, stock, and cost control
Business acumen with a record of delivering results
Culinary qualifications
Proficiency in business technology (stock control, spreadsheets, accounting software)
