Alivio Tourist Park Canberra is an award-winning property located in O’Connor – five minutes from the city.
We have two Food and Beverage Operations: The Verandah, our casual pub/bistro style restaurant that seats 200 and is open 7 days for breakfast and dinner; and the Group Dining Hall that can cater for up to 120 patrons (often three sittings per day) and catering to school group meals that is about to be redeveloped.
About the role
The role oversees all kitchen operations in The Verandah and the Group Dining Hall, leading a team of qualified chefs along with pizza cooks.
This is a hands-on role in high-volume kitchens.
The working space is new and professional, the culture is positive, and the atmosphere is pumping during service.
You will work with management to drive COGS, labour and new revenue, and develop the food and beverage offerings with The Verandah Venue Manager and the property General Manager.
Responsibilities
Oversee kitchen operations in The Verandah and Group Dining Hall
Lead a team of qualified chefs and pizza cooks
Maintain high-volume service standards and drive profitability (COGS, labour, revenue)
Collaborate with The Verandah Venue Manager and General Manager to develop F&B; offerings
About you
Industry recognised chef certification
Proven capacity for innovative food service production, menu planning and recipe development
Excellent communication and organisational skills
Confident in menu costing, writing SOPs, managing wage costs, recruitment, and auditing
Significant focus on quality control and product integrity
Strong financial acumen to manage budgets, forecast and expenses
Ability to work weekends and split shifts
