About Darwin Services Club
We’re reopening on The Esplanade at historic Admiralty House, a refreshed, community-minded club with a modern fit-out, well equipped kitchen and flexible event spaces. The brief: quality bistro dining for locals and visitors, plus polished functions from corporate luncheons to large scale events and dinners.
The role - Head Chef
- Build and mentor a high-performing brigade from day one.
- Create seasonal, costed menus; engineer GP% and reduce waste.
- Own rostering, labour control, forecasting and prep plans.
- Run service to consistently high standards across bistro and functions.
- Oversee stocktaking, ordering, supplier negotiations and price files.
- Lead food safety and EHO compliance.
You: 5+ years in a Head/Executive Chef role (or higher), strong people leadership, sharp on labour/COGS, steady under pressure, and proud of clean, consistent execution.
