Fish House Steak & Grill is the Sunshine Coast's newest elegant dining destination, proudly brought to you by the award-winning team behind Bella Venezia, the region's most awarded restaurant.
Recently awarded a 13-point Chef Hat, Fish House Steak & Grill is one of only two venues in Mooloolaba to receive a Chef Hat, firmly establishing itself as a leader in premium dining on the Sunshine Coast.
Located just 100 metres from the beach and parks on the iconic Mooloolaba Spit, the venue blends contemporary coastal design with a refined Japanese-influenced menu, featuring seafood-driven dishes complemented by an exceptional steakhouse offering showcasing the finest cuts available. The restaurant has quickly gained strong local support and national industry attention.
We are open seven days a week for lunch and dinner from 11:30am until late and feature an extensive wine list of over 350 labels and 40 wines by the glass, supported by a team of dedicated sommeliers.

About the Role
We are seeking an experienced, confident, and highly professional Restaurant Manager to lead front-of-house operations and deliver service at the level expected of a Chef Hat–awarded restaurant.
This is a hands-on leadership role suited to a manager who thrives in premium dining environments, understands service precision, and can inspire a large and diverse team.
Key Responsibilities
* Oversee all day-to-day FOH operations with a strong focus on service excellence
* Lead, mentor, and motivate a team including section waiters, bartenders, sommeliers, hosts, food runners, supervisors, and baristas
* Drive a culture of professionalism, energy, and hospitality consistent with Chef Hat standards
* Manage rosters, labour costs, and operational budgets in line with business targets
* Work closely with the Head Chef, Executive Chef, and Group Operations Manager to ensure seamless FOH/BOH collaboration
* Maintain compliance with licensing, WH&S, and workplace regulations
* Ensure consistently high guest satisfaction and service recovery standards

Skills & Experience Required
* Proven experience as a Restaurant Manager in an elegant dining or premium hospitality environment
* Minimum 1–2 years' experience in a Restaurant Manager role
* Assistant Managers ready to step up to Restaurant Manager level are encouraged to apply
* Strong leadership and people-management skills
* Solid understanding of food, wine, and beverage service
* Basic wine knowledge required to confidently support sommelier operations
* Highly organised with strong problem-solving abilities
* A genuine passion for hospitality and creating memorable guest experiences
* Experience in a Chef Hat or Michelin-recognised venue is highly regarded
