Restaurant Santino is a hatted modern Italian restaurant in the heart of Wollongong, known for its produce-driven menus, fresh pasta program, and refined but approachable dining experience. We're looking for an experienced Sous Chef to join our kitchen leadership team.
This is a hands-on role for a confident, calm operator who enjoys leading from the front, cares deeply about consistency and detail, and thrives in a well-run, professional kitchen.
About the Role
As Sous Chef, you'll work closely with the Head Chef to support day-to-day kitchen operations and service. Your responsibilities will include:
* Supporting the Head Chef in all aspects of kitchen leadership and service
* Leading services with confidence and composure
* Producing high-quality dishes with a strong focus on fresh pasta, Italian classics, and seasonal produce
* Training, mentoring, and supporting junior kitchen staff
* Maintaining food quality, consistency, and presentation standards
* Assisting with ordering, stock control, and kitchen organisation
* Ensuring compliance with food safety, hygiene, and WHS standards
* Contributing to menu development and continuous improvement
This is a role for someone who enjoys being on the tools while helping shape a positive, professional kitchen culture.
What We're Looking For
* Proven experience as a Sous Chef or strong Senior CDP ready to step up
* Solid background in Italian or European-style kitchens (fresh pasta experience highly regarded)
* Strong leadership and communication skills
* Calm, organised, and reliable under pressure
* A genuine passion for produce, technique, and consistency
