What You'll Be Doing
As Senior Baker / Production Manager, you will lead and oversee daily bakery production, setting the standard for quality, efficiency, and consistency across the operation. You'll balance hands-on baking with leadership, planning, and continuous improvement.
* Lead and oversee all bread and dough production, remaining hands-on where required
* Manage and plan medium-to-high volume production to meet daily and weekly targets
* Drive consistency and quality across sourdough and artisan bread ranges
* Structure production workflows to improve efficiency, output, and labour utilisation
* Scale up production while maintaining product integrity and brand standards
* Develop, test, document, and refine recipes and production processes
* Identify issues quickly and problem-solve in a fast-paced production environment
* Train, mentor, and support bakers and pastry chefs at all levels, building a strong and capable team
* Maintain strict food safety, hygiene, and compliance standards
* Work closely with management to support growth and operational improvements

What We're Looking For
* Strong technical knowledge of baking techniques and production processes
* Proven experience in sourdough and artisan baking at a senior or leadership level
* Demonstrated ability to scale production without compromising quality or consistency
* Confidence in leading, structuring, and motivating production teams
* Proven ability to train, mentor, and develop junior and new team members
* Strong problem-solving skills and the ability to make sound decisions under pressure
* Passion for recipe development, process improvement, and innovation
* Excellent communication, leadership, and organisational skills
* High attention to detail with a strong commitment to food safety and hygiene
* Food Safety Certification (preferred but not essential)
* Weekend availability is essential
* Australian work rights required
