Think house-made antipasti piled high with sardines, scallop crudo, marinated peppers and baked tomino. Grilled snacks that hit every craving — prawns with chilli and fennel, honey + rosemary chicken wings — and of course, that famous Totti's bread, fired to order in our state-of-the-art kitchen.
And now, we're looking for a Senior Sous Chef who wants to shape the next chapter.
The Role
* Lead in one of Sydney's most iconic Italian dining rooms
* Work with premium produce, a wood-fired oven, and a fully kitted-out modern kitchen

What you'll bring
* 5 + years' experience in a high-end wine bar, restaurant or brasserie
* Calm, polished presence in an open kitchen — even when the room is pumping
* A leader's mindset: confident running a section, coaching juniors and elevating standards
* Genuine love for Italian flavours, produce and technique
* Wood-fire experience is a huge bonus
* Communication, work ethic and integrity that set the tone for the team
