About the role:
Mercure Townsville is on the hunt for an energetic and hands‑on Restaurant Manager who thrives on the floor, leading from the front, driving service standards, and creating memorable dining moments.
This is a role for someone who loves the buzz of a busy venue, knows how to build a strong team culture, and brings a confident leadership style that inspires people to perform at their best.
As Restaurant Manager, you'll take ownership of the daily operations of Celsius Restaurant, ensuring smooth service, strong performance, and an experience that keeps guests and locals coming back.
* Lead daily restaurant operations, hands‑on, present on the floor, driving service flow
* Deliver exceptional guest experiences through consistent service standards and attention to detail
* Train, coach and develop FOH team members to build capability and performance
* Drive team engagement, accountability and service culture through strong leadership
* Recruit, onboard and retain talent aligned to our hospitality standards
* Manage rosters, labour cost and productivity with a strong commercial mindset
* Monitor guest feedback and online reviews, implement improvements and uplift standards
* Ensure compliance with WH&S, food safety and sustainability practices
* Partner closely with the kitchen team to ensure seamless, high‑quality service
* Lead by example every shift, bringing energy, structure and positivity to the team
About you:
* Proven experience leading a successful team in a high‑volume restaurant / hotel environment
* Strong communicator with genuine leadership presence and the ability to influence
* Confident at multitasking, prioritising and staying calm under pressure
* A guest‑first mindset with a passion for service and hospitality excellence
* Positive, proactive, solutions‑focused personality with creative flair
* Immaculate personal presentation and strong attention to detail
* Valid RSA and Food Safety certificates
* Flexibility to work across a rotating roster (days, nights and weekends)
