About the Role
We are seeking a motivated and experienced Food & Beverage Supervisor (Cruise Director) to join our team at Darwin Harbour Cruises. This is a full-time position, commencing early February 2026. The Cruise Director is a hands-on role that would be perfect for hospitality professionals looking to lead a team in a premium dining space on a luxury vessel in Darwin's Harbour - the best place in the world to watch the sunset
Working alongside the Vessel Master and Chef, the Cruise Director plays a key role in achieving the company's mission of providing our guests with outstanding customer service, quality products and an unparalleled experience. The ideal candidate will be passionate and proud of the food and service they deliver, and be willing to go above and beyond for our guests. You will be a team player with a demonstrated positive "can-do" attitude and have the flexibility to work varied hours, including nights, weekends, and public holidays.
As a Cruise Director, you will oversee and supervise both customer service and Food & Beverage operations, ensuring compliance with Operational Procedures and Workplace Health and Safety (WHS) requirements. Duties include:
* Recruit, induct, and manage seasonal Cruise Attendants.
* Develop, implement, and maintain FOH 'Work Instructions' and service standards.
* Oversee training, development, and cross-training of all FOH crew.
* Oversee ordering and stock management in line with PAR levels and cost controls.
* Maximise sales opportunities, including upselling food & beverage.
* Coordinate charter & event logistics, including support with site visits, bump-in/bump-out, and special service requirements.
A standard working day can consist of up to 10 working hours. Shifts commence and finish at Stokes Hill Wharf, Darwin.

About You:
* Sound written communication and presentation skills.
* Understanding of budgets and meeting targets.
* Strong organisational skills with the ability to work as a team player.
* Excellent customer service and problem-solving skills.
* Excellent food & beverage knowledge is required with events knowledge preferable.
* Exceptional time management and prioritisation skills. Ability to juggle competing priorities and support dispersed teams.
* Understanding different software packages and the ability to quickly learn new ones.
* Ability to manage multiple events, work under pressure, set priorities and meet tight deadlines.
* A collegiate and collaborative style, working in a team environment.
* Ability to adapt to a frequently changing market environment.
* Marine experience not essential, but must not be affected by sea sickness
* Have the necessary working entitlements to work in Australia.
Required Education/Experience:
* First Aid & CPR.
* Responsible Service of Alcohol & NT Refresher.
* Food Safety Handling certificate (or willing to obtain).
A pre-employment medical and National Police Check may be required as part of this recruitment process.
