We are seeking a talented and passionate Sous Chef to join our dynamic team at Coral Sea Marina Resort. Reporting directly to the Executive Chef, you will play a pivotal role in supporting the Head Chef with the planning, preparation, and delivery of high-quality, consistent food experiences across our Pavilion and Events operations.

Key Responsibilities
- Work closely with the Head Chef to design and produce diverse menus in line with the Coral Sea Pavilion & Events vision.
- Oversee kitchen operations to ensure efficiency, professionalism, and exceptional service standards.
- Demonstrate initiative, passion, and strong attention to detail in all aspects of food preparation and presentation.
- Deliver high-quality dishes while maintaining consistency with established menus and standards.
- Lead, train, and mentor the kitchen team to achieve excellence in productivity, standards, and teamwork.
- Uphold hygiene, food safety, and HACCP standards at every stage of preparation and service.
- Ensure kitchen equipment is maintained to a safe, professional standard and report any issues promptly.
- Support the Executive Chef with HR responsibilities, including training, performance reviews, recruitment, and team development.
- Ensure compliance with all Workplace Health & Safety and emergency procedures.
- Represent the Resort with professionalism, strong leadership, and a positive, proactive attitude.
About You
- Demonstrated experience as a Chef with proven leadership in a busy, high-quality kitchen environment.
- Strong communication skills, both written and verbal.
- In-depth knowledge of health, safety, and environmental regulations including HACCP.
- Ability to multitask, remain calm under pressure, and solve problems effectively.
- Highly accountable, detail-oriented, and results-driven.
- Ability to manage, mentor, and motivate a team while maintaining discipline and teamwork.
- Professional presentation and confidence when engaging with guests and staff.
- Positive, enthusiastic, and solution-focused with the ability to work autonomously.
- Must have current and valid working rights in Australia
Qualifications
- Certificate III in Commercial Cookery (minimum requirement).
- Food Safety Certificate (required).
- Food Safety Supervisor Certificate (desirable).
- First Aid & CPR (desirable).
