Shell Roadhouse is a well-established roadhouse located in Hay, NSW, on the Sturt Highway between Sydney and Adelaide. We serve travellers, freight drivers, tourists and locals seven days a week, providing fuel, dine in and takeaway food, breakfasts, hot meals, grills, sandwiches, and traditional roadhouse fare. Our kitchen operates extended trading hours, including weekends and public holidays, and consistently produces high volumes of fresh, made-to-order meals. Wth a dedicated restaurant section we strive to provide excellent food and service to our patrons. About the Role We are seeking an experienced and reliable Cook to join our kitchen team on a full-time, permanent basis. The successful applicant will take a leading role in the day-to-day kitchen operation, preparing and cooking a wide variety of menu items, managing food stock, and ensuring the highest standards of food safety, hygiene and presentation. The role suits a hard-working professional who enjoys high-volume cooking and rural Australian community life. Key Duties and Responsibilities The successful candidate will: Examine foodstuffs and supplies on delivery to ensure quality and adherence to specifications. Plan menus, estimate food and labour costs, and order food supplies from approved suppliers. Receive, store and rotate food in temperature-controlled facilities to maintain freshness and minimise waste. Prepare, season and cook a broad range of menu items including breakfasts, grills, hot meals, takeaway items, salads, soups, sandwiches and dessert dishes. Portion food, arrange dishes on plates, and add gravies, sauces and garnishes consistent with menu specifications. Prepare meals to meet special dietary, religious and allergy-related requirements (e.g. gluten-free, vegetarian, halal where applicable). Maintain kitchen hygiene, cleanliness and food safety in line with HACCP, NSW Food Authority and council requirements; complete cleaning rosters and temperature logs. Train, supervise and assist kitchen hands and apprentices Liaise with front-of-house staff to ensure timely, accurate service during peak trading periods. Cook Bulk meals and Portion it for ready to go meals for Truckies. Contribute to menu development, including seasonal specials, costing and pricing recommendations. Adhere to all Workplace Health and Safety policies and procedures. Skills, Qualifications and Experience Required AQF Certificate III or higher in Commercial Cookery (or an equivalent overseas qualification recognised in Australia); OR at least three (3) years of relevant full-time work experience as a Cook in a commercial kitchen in lieu of formal qualifications. Demonstrated experience preparing and cooking a wide range of dishes in a high-volume cafe, restaurant, pub, hotel or roadhouse kitchen. Sound working knowledge of food safety, hygiene and HACCP principles. Current Food Safety Supervisor certificate (or willingness to obtain prior to commencement). Strong time-management skills and the ability to work efficiently under pressure during peak service. Ability to work independently with minimal supervision, and as part of a small, close-knit team. Willingness and availability to work a rotating roster including early mornings, evenings, weekends and public holidays.
