Levantine Hill Estate are looking for a high-energy Venue Manager to lead one of Australia's most iconic wine and hospitality destinations.
This is a business leadership role as much as an operational one. You'll own venue performance end-to-end - financials, people, systems and guest experience - across our restaurant, cellar door and events operations, with hotel service operations to follow when our 33-room boutique hotel opens in 2026.

What You'll Own
Business Performance
• Full P&L ownership and financial accountability.
• Labour forecasting, wage control and productivity management.
• COGS management and stock control across food, beverage and consumables.
• Daily, weekly and monthly reporting and performance insights.
Operations & Leadership
• Lead from the front across restaurant, cellar door, events and hotel service operations.
• Visible, hands-on leadership during peak service, nights and weekends.
• Build, mentor and performance-manage FOH and BOH teams.
• Partner with the Executive Chef to balance culinary excellence with operational efficiency.
• Drive service flow, labour structure and venue execution.
Systems & Standards
• Oversee POS, reservations, CRM and reporting platforms for accuracy and efficiency.
• Manage ordering, inventory and par levels.
• Ensure food safety, licensing and compliance standards are met.
• Uphold corporate policies and operational procedures.
What You Bring
You're commercially minded, operationally strong and thrive in fast-paced premium venues.
• 5+ years' experience managing multi-space hospitality venues
• Strong financial acumen - reporting, forecasting, labour control and margin management
• Hands-on, floor-led leadership style
• Experience selling premium wine (highly regarded) with natural guest engagement skills
• Flexibility across a seven-day operation including nights and weekends
