Position Purpose
The Chef will be responsible for planning, preparing, and presenting high-quality dishes that reflect the seasonal, contemporary Australian style of Café Lagarto. This position plays a key role in enhancing our culinary standards, supporting kitchen operations, and contributing to menu development and business growth.
Key Duties & Responsibilities
Plan, prepare, cook, and present a variety of high-quality dishes in line with the café's seasonal menu and food philosophy
Create new menu items and seasonal specials, including options for dietary needs (e.g., gluten-free, vegetarian, vegan)
Monitor food preparation and presentation standards to ensure consistency and quality
Supervise and coordinate activities of kitchen staff and junior cooks
Manage inventory, food stock rotation, and ordering of kitchen supplies
Ensure compliance with food safety, hygiene, and workplace health regulations in accordance with Queensland Health standards
Maintain a clean and organized kitchen at all times
Assist in cost control and portion management to support food cost targets
Train and mentor junior kitchen staff and support a positive kitchen culture
Collaborate with management to plan catering offerings and special event menus
Skills & Experience Required
Minimum AQF level Associate Degree, Diploma or Advanced Diploma in Commercial Cookery or else at least 3 years of relevant experience in a Chef role if no formal qualifications held
At least 1 year of relevant work experience as a ChefAbility to design and deliver modern café-style menus
Strong understanding of food safety practices (HACCP knowledge preferred)
Experience managing busy service during peak hours (particularly weekends)
Ability to work independently and as part of a small, collaborative kitchen team
Excellent time management, problem-solving, and communication skills
Ability to work with local, fresh, and seasonal ingredients
Knowledge of Australian café culture and dining expectations
