**FOOD AND BEVERAGE MANAGER**

We are looking for a great, truly outstanding Food and Beverage professional to lead our full Food and Beverage Department at Crystalbrook Vincent. Reporting to the General Manager, you will oversee and support the successful delivery and management of Fiume Rooftop Bar, Mews Restaurant, IRD, Minibar and conferences and events.

**Mews Restaurant**
Mews embraces the sharing nature of dining by offering share plates that can be enjoyed together and providing exciting dishes that prompt conversation, all while working in partnership with southeast Queensland's best artisans, farmers and fisherman who share the same beliefs of local, responsibly grown food.

**Fiume Rooftop Bar**
Whether it be by sunshine or by stars, for our aperitivo hour or the definitive Sunday session, Fiume - named after the Italian word for river - is a cool place to meet, drink, eat and listen to our master DJ.

**Conference & Events**
Wedding, parties, anything, we cater for everything and our views, service and food are unmatched.

**The Role**
You will be a hands-on leader that will own the strategic operation - ensuring high-quality service to all hotel guests and customers, the presentation and enjoyment of fine cuisine, high-end fast-paced rooftop bar service and professional meetings and functions service.

Your responsibilities include:

- Drive guest satisfaction across all outlets empowering our venue managers and collaborators to provide service beyond guest and customer expectations
- Foster a culture of innovation, personality and breaking the norm
- Provide hands-on leadership across all outlets
- Collaborate with the Kitchen leadership team
- Oversee financials for the department, driving revenue generation, productivity cost control and adherence to financial policy/procedures
- Ensure on-job department training is conducted to achieve high service standards.
- Select, train and supervise food and beverage Collaborators (our name for staff) with the support of our People & Culture Manager
- Ensure spend per head is increased without impacting guest satisfaction and quality.
- Ensure compliance with health regulations and workplace health and safety
- Contribute to industry best practice and cutting edge innovations in the dining and beverage world
- Work with Sales & Marketing to plan and organise special events and promotional activations
- Work and develop relationships with external suppliers and hotel group contracts to ensure the very best in service, the highest quality product, and the highest financial return for each outlet and overall.

Your many talents will include:

- At least 3-5 years proven management experience managing multiple outlets of quality restaurants/bars
- Advanced knowledge of the principles and practices within the food profession
- A track record of financial acumen, cost control, analysis and reporting
- Demonstrated history of effectively building F&B; team skills and product knowledge to achieve organisational goals
- Tertiary qualifications minimum of Diploma in Hospitality preferred
- RMLV certificate
- Demonstrated strong entrepreneurial characteristics
- Experience in presenting ideas and results to different stakeholders across the business including staff and senior management
- Ability to think strategically, always forward planning for business success
- Understanding of capital expenditure and ROI
