The Sous Chef will assist the Head Chef in the daily operations of the kitchen, ensuring the delivery of high‑quality food, efficient workflow, and compliance with all food safety and hygiene standards. The position requires advanced culinary skills, supervisory capability, and the ability to manage the kitchen in the Head Chef's absence.
Responsibilities
* Prepare, cook, and present menu items according to the restaurant's standards.
* Assist the Head Chef in menu planning, development of specials, and improvement of kitchen processes.
* Lead and supervise the kitchen team when the Head Chef is not on duty, ensuring a smooth operation across all sections.
* Oversee food preparation, portion control, and presentation to maintain consistency and quality.
* Monitor and enforce strict hygiene, sanitation, and food safety practices in line with local regulations.
* Train, mentor, and support junior kitchen staff in culinary techniques and kitchen procedures.
* Ensure effective communication between the kitchen and front‑of‑house (FOH) teams to deliver an exceptional customer experience.
* Assist with rostering of kitchen staff in the absence of the Head Chef.
* Conduct stock control, inventory checks, ordering of supplies, and management of wastage.
* Manage dietary requirements and prepare meals for customers with allergies or special diets (e.g., gluten‑free, vegan).
* Uphold a high level of professionalism and maintain a safe, clean, and organised working environment at all times.
Qualifications & Experience
* Certificate IV in Commercial Cookery, and Diploma of Hospitality Management.
* Minimum of 1 year's relevant experience in a similar role within the hospitality industry.
* Strong knowledge of commercial kitchen operations, cooking methods, menu development, and food safety standards.
* Demonstrated experience supervising or leading kitchen staff.
* Excellent time management, teamwork, problem‑solving, and communication skills.
* Ability to work in a fast‑paced environment while maintaining high standards.
