Key Responsibilities
As our Baker (Sourdough), you will be responsible for the preparation and production of a range of artisan breads in a wholesale production environment, ensuring consistency, quality and presentation at all times. Duties include:
* Preparing, mixing, fermenting, baking and finishing sourdough and other bread products to specified recipes, standards and timeframes
* Consistently achieving target dough temperatures and shaping breads and sweet doughs by hand
* Operating and maintaining bakery equipment including mixers, rounders, rack / deck ovens and related equipment
* Ensure daily bread production requirements are met in regard to volume and quality targets
* Maintaining a clean, organised and safe work environment in line with food safety and workplace health and safety requirements
* Lead by example and ensure bakery procedures and standards are followed
* Communicating effectively with team members and management regarding production needs and workflow
* Supporting training and development of other team members where required
* Support the Head Baker with ingredient ordering and waste management
* Managing time effectively through planning and organisation to maintain productivity
* Demonstrating flexibility, adaptability and a positive approach to change
* Actively engaging in ongoing skills development and continuous improvement
Essential Skills and Experience
* Certificate III in Baking or higher
* Minimum 2 years of relevant baking experience in a commercial or wholesale bakery environment
* Experience working in a HACCP-based food production environment (preferred)
* Strong knowledge of food safety and workplace health and safety requirements
* Proven ability to work to a high standard in a fast-paced production environment
* Ability to work both independently and as part of a team
* Strong communication skills and a reliable, professional work ethic
