We're looking for a full-time qualified baker who is experienced in artisan sourdough and natural fermentation, to join our artisan bakery.
JOB SUMMARY
Your role, as artisan baker at Miller + Baker, is to manage the daily bread production in our Lake Street bakery.
You must have a minimum of 3 years experience in a similar position and be interested and experienced in the science and tradition of sourdough baking, dedicated to consistently high standards and excited at the prospect of using fresh and local ingredients - including freshly milled Western Australian flour.
YOUR TASKS WILL INCLUDE:
- Production management, daily quality product check, maintain sustainable levels of levains, bread and dough related inventory items and ingredients.
- Make recommendations and implement bakery processes.
- Manage the production of multiple doughs and breads, prepare, mix and bake sourdough loaves and specialty breads according to calculated weekly numbers and wholesale orders.
- Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations.
- Checking the quality of raw materials and weighing ingredients.
- Kneading, maturing, cutting, moulding, mixing and shaping bread and pastry doughs.
- Monitoring oven temperatures and product appearance to determine baking times.
- Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls.
- Operating bakery machines including bun rounder, mixers, dough breaker and deck oven.
- Emptying, cleaning and greasing baking trays, tins and other cooking equipment.
- Collaborate with other bakery sections (eg. Pastry team, Front of House, Milling) to share space, ingredients, and labour.
- Assist with the creation, implementation and maintenance of bakery procedures and policies for hygiene and OH&S.
- Develop and create recipes of new products to ensure correct pricing
- Work with the management team to promote and develop the Miller+Baker Perth brand.
- Assist with the implementation and scheduling of a regular cleaning and maintenance schedule for all kitchen areas & major equipment.
