Set in the World Heritage Blue Mountains with views of the Jameson's valley, the Fairmont Resort and Spa boast's 224 rooms, 5 Food and Beverage Outlets, a large Conferencing and Events department, 18-hole golf course, multiple family and wellness facilities and a 16 room Day Spa as well as ongoing developments.

We are seeking a highly skilled, passionate and hands-on Executive Sous Chef to join our kitchen team. Reporting directly to the Executive Chef you will be responsible for all Kitchen duties in their absence which includes overseeing our five food and beverage outlets, in-room dining facilities and conferencing and events requirements.

Responsibilities:

* In the absence of the Executive Chef manage the operations functions of the resort kitchens including but not limited to rostering, forecasting, stock, and cost control
* Supportive and passionate leader to the kitchen team members to ensure service standards are always met and exceeded
* Hands-on as required to meet kitchen demands
* Assist in training and developing the team to meet the needs of the business and individuals
* In conjunction with the Executive Chef, design, plan, and cost menus
* Manage the team to ensure timely service and a high standard of presentation is achieved
* Work collaboratively with other departments to drive business performance, conferencing, Food & Beverage
* Maintain hygiene, health, safety, cleanliness, and environmental standards in the kitchen by adhering to relevant legislative, regulatory, insurance and industry standards for the Resort

What will you bring to the team?

* Strong leadership and mentoring skills with a focus on developing the kitchen team
* Previous experience as a Sous Chef /Executive Sous Chef is preferred
* Restaurant background within a hotel environment is essential
* Ability to work under pressure in a fast-paced environment whilst maintaining high and consistent attention to detail and standards
* Strong communication skills
* Ability to build effective relationships with other departments, suppliers, etc
* Outstanding work ethic with the flexibility to work rotating rosters and shifts
* Excellent organisational skills and grooming standards
* Relevant Trade qualifications
