Pastry Chef – Coolangatta Airport
We are looking for a motivated and enthusiastic Pastry Chef to join our busy national bakery. The ideal candidate will have a strong background in either food manufacturing and production or large multi‐function high‐end venues, with experience producing consistent, high‐quality culinary items.
Typical Day
As a Pastry Chef you will work in a busy, open‐plan kitchen preparing and cooking various international hot and cold meals for our customer airlines. Your role will also involve supervising Kitchen staff including Catering Attendants and casual labor hire team members.
Key Responsibilities
* Maintain a kitchen environment that promotes flair, creativity, and consistency in menu quality.
* Be multi‐skilled and lead teams across all areas of food production and assembly.
* Ensure correct stock rotation and minimal/no product wastage.
* Prioritize and manage workload to meet cold‐soak requirements and pickup times.
* Prepare complex, exotic dishes to specification.
* Provide feedback on production process shortfalls to improve efficiency and exceed customer service expectations.
* Supervise and train kitchen staff as required.
* Perform activities in line with passenger load requirements and Airline specifications.
* Participate in customer menu development and presentation.
* Comply with hygiene, safety, quality, customer‐service, right‐first‐time and performance standards.
* Comply with dnata Food Safety requirements including Personal Hygiene, Good Manufacturing Practice (GMP), and Food Handling and Storage requirements.
* Comply with Customer and Legislative HACCP requirements.
Requirements
* Certificate III Commercial Cookery or higher qualifications preferred, or equivalent experience.
* Passion and drive to deliver high‐quality food to our customers.
* Ability to work a 7‐day rotating roster.
* Strong attention to detail.
* Excellent organisational‐time management skills.
* Motivated, hardworking and positive attitude.
* Ability to work under pressure in a busy kitchen.
* Previous commercial kitchen experience preferred but not essential.
* Experience preparing, cooking and baking pastries and desserts to specification.
* Application of varied and complex knife skills.
* Clear National Police Check (required for aviation services).
* Availability to work 38 hours per week; this is a full‐time, permanent position.
