HEAD SOMMELIER — AAMBRA
Aambra is a contemporary Levantine fine‑dining restaurant set within a restored heritage church in Rose Bay. Our philosophy is rooted in bold flavours, handcrafted details, and a service style that is warm, intentional, and deeply story‑driven. With stained glass windows, high ceilings, live charcoal cooking and a menu that journeys through the Levant, Aambra aims to create a transcendent dining experience — one that guests feel compelled to return for.
We are seeking a Head Sommelier who can elevate this experience through a world‑class wine program that complements our Levantine flavours and enhances the storytelling at the heart of Aambra.
Role Overview
The Head Sommelier will lead all aspects of Aambra's wine program — from curation and procurement to team training and guest engagement. This role requires a passionate, deeply knowledgeable wine professional who thrives in fine dining and understands how to translate wine into emotion, memory, and discovery for our guests.
Service responsibilities include creating a wine list that reflects our culinary identity, balancing the Levant's heritage with global selections, championing boutique producers, and always pushing for excellence.
Key Responsibilities
Wine Program & Cellar Management
* Curate and maintain a world‑class wine list tailored to Aambra's menu and seasonal changes
* Manage procurement, stock control, and supplier relationships
* Oversee cellar organisation, storage standards, and stock rotation
* Create by‑the‑glass programmes and pairing experiences aligned with our culinary concept
* Monitor wine cost, GP targets, and ensure financial performance aligns with venue goals
Guest Experience & Service
* Deliver exceptional table‑side wine service with confidence, warmth, and precision
* Guide guests through personalised recommendations based on flavour preferences and menu choices
* Lead wine pairings for tasting menus and special events
* Uphold the highest service standards, supporting the FOH team in creating memorable guest moments
Team Training & Leadership
* Develop and implement an ongoing training programme to build wine confidence across the FOH team
* Conduct tastings, service workshops, and educational sessions
* Work closely with the GM and Exec Chef to integrate wine into Aambra's overall storytelling
* Lead by example with professionalism, passion, and attention to detail
Events & Experience Development
* Collaborate on developing wine dinners, masterclasses, and private dining offerings
* Support content creation for social media and wine‑related storytelling
* Represent Aambra at industry events, tastings, and partnerships when required
Skills & Qualifications
* Minimum 3 years experience as a Sommelier in a premium or fine‑dining venue
* Strong knowledge of global wine regions, varietals, and emerging producers
* WSET Level 3 or equivalent (WSET Diploma preferred but not essential)
* Exceptional communication and guest engagement skills
* Strong organisational skills with the ability to manage inventory and costs
* Ability to lead, train, and inspire a team
* Passion for wine as a craft, culture, and storytelling medium
