Overview

Trinh’s Kitchen Pty Ltd is seeking a passionate and experienced Cook to join our busy kitchen team. Our restaurant specialises in authentic Vietnamese cuisine, offering a wide range of dishes including shaking beef, stir-fries, curries, sizzling plates, noodle soups, and traditional appetisers.

The successful applicant will be responsible for preparing and cooking high-quality meals, maintaining consistency in flavour and presentation, and ensuring kitchen operations run smoothly in a fast-paced dining environment.

This is an excellent prospect for someone who is enthusiastic about Vietnamese and Asian-style cooking, and who is committed to maintaining high standards of food quality and kitchen hygiene.

Responsibilities

- Prepare, season, and cook a wide variety of Vietnamese dishes, including meats, seafood, vegetables, curries, stir-fries, noodle and rice dishes, appetisers, and desserts.
- Ensure freshness and quality of ingredients by examining and inspecting produce prior to preparation.
- Operate and monitor kitchen equipment including stoves, grills, fryers, ovens, and steamers.
- Portion, plate, and garnish meals, ensuring presentation meets restaurant standards, including signature dishes such as Shaking Beef, Red Curries, and Sizzling Plates.
- Follow established recipes and menus, adapting dishes where necessary to accommodate customer requests and dietary needs.
- Follow instructions and daily preparation schedules provided by the senior chef.
- Regulate temperatures of ovens, grills, and fryers to ensure proper cooking processes.
- Store food safely and in accordance with HACCP and food safety guidelines.
- Maintain cleanliness and organisation of work areas, utensils, and cooking equipment.
- Assist in stock control, rotation, and ordering supplies when required.
- Work collaboratively with kitchen team members to ensure efficient operations during service.
- Adhere to workplace health and safety regulations at all times.

Qualifications

- Certificate III in Commercial Cookery including at least two years of on-the-job training, or Certificate IV in Commercial Cookery / Kitchen Management.
- Minimum of 1 years of proven experience as a Cook in a busy commercial kitchen (experience in Vietnamese or Asian cuisine highly desirable).
- Sound knowledge of Vietnamese cooking techniques, flavour balancing, and preparation of traditional dishes.
- Ability to work under pressure in a high-demand setting.
- Good communication skills and the ability to work well as part of a team.
- Understanding of food hygiene, safety regulations, and allergen management.
