The team from Humbug, are joining forces with Flotilla — two of Newcastle's hatted restaurants. Between us, we've created spaces that celebrate delicious food, genuine hospitality, and good times. Now, we're building our next team of Front of House professionals to help us deliver memorable experiences every single service.
The Restaurant
Papalote is a destination Mexican restaurant, inspired by the rich food traditions of regional Mexico. We are creating a space that is inviting, joyas and transportive. The Corazón (heart) of our restaurant is our kitchen, which will showcase the diversity of Mexico's culinary landscape with respect to their tradition and passion for bold & vibrant flavours. Paired with a playful, delicious list of mezcal and tequila-based cocktails, every visit will be an adventurous delight.

The Role
We're looking for hospitality Front of House professionals across all levels, including Managers & Bartenders (full time, part-time, and casual positions). If you've worked in quality dining before and know how to balance professionalism with warmth, we would love to hear from you.
We are currently recruiting for all front of house positions including wait staff, bartenders, supervisors, and managers.
What We're Looking For
- Previous hospitality/front of house experience (essential — this isn't your first rodeo 😉).
- Candidates must have hospitality experience in any sector of the industry.
- Minimum 1 year of front of house hospitality experience required.
- A customer-first mindset: you love making people feel welcome, valued, and at ease.
- Positivity, warmth, and charismatic energy that shines on the floor.
- Strong communication, attention to detail, and the ability to thrive in a fast-paced environment.
- Team players who bring both professionalism and fun to service.
- Wine & spirit knowledge is a bonus – or a willingness to learn from our experienced team.
- Availability to work Friday and Saturday's is a must. We rest on Sundays.
