Restaurant Leadership Opportunity
We are seeking a seasoned Restaurant Manager to lead our front-of-house operations and uphold our commitment to excellence.
Key Responsibilities:
* Lead, supervise, and actively participate in all dinner service operations.
* Deliver a refined and engaging guest experience, maintaining the highest standards of service.
* Communicate with the kitchen regarding dietary requirements and guest preferences to ensure seamless coordination.
* Manage customer interactions with professionalism, warmth, and efficiency.
Beverage Program
* Curate and maintain an exceptional wine list, with a focus on both local and international selections.
* Handle wine procurement, ordering, and cost control.
* Create and prepare a seasonal cocktail menu, including signature cocktails and non-alcoholic beverages made with house ferments and modern techniques.
* Develop thoughtful wine pairings for the 7-course degustation menu.
Team Management
* Recruit, train, roster, and supervise waitstaff and front-of-house team members.
* Manage cleaning and service rosters, ensuring optimal staffing and operational coverage.
* Foster a culture of professionalism, continuous learning, and hospitality excellence.
Reservations & Communications
* Manage the restaurant's booking system and ensure timely, professional communication with guests.
* Oversee company email and telephone lines, responding to inquiries, bookings, and special requests.
* Liaise with the kitchen and guests regarding dietary restrictions, special occasions, and other tailored experiences.
Systems & Stock Management
* Maintain and update the POS and ordering systems, ensuring all items and pricing are current and accurate.
* Conduct regular stock takes and manage inventory levels to ensure cost efficiency and avoid shortages.
* Work closely with suppliers to ensure timely and high-quality deliveries.
Financial Oversight
* Monitor beverage and front-of-house financial performance, including profit margins and cost controls.
* Work alongside ownership to track and report key financial metrics.
* Ensure accurate financial practices related to beverage purchasing and stock management.
Events & Regional Showcase
* Coordinate and manage events that celebrate the rich culinary and cultural identity of the region.
* Collaborate with local producers, winemakers, and artisans to create immersive and authentic experiences.
* Oversee all front-of-house logistics for events, ensuring seamless execution and exceptional guest service.
* Contribute to the creative development of events that enhance our connection to the community and region.
Requirements:
* Proven experience in a similar restaurant management role, ideally in a fine dining or high-concept venue.
* Strong knowledge of wines, spirits, cocktails, and beverage service.
* Exceptional leadership and interpersonal skills.
* High attention to detail, with strong organizational and problem-solving abilities.
* Familiarity with reservation and POS systems, preferably with experience in maintaining system databases.
* Passionate about hospitality, food, beverage, and guest experience.
* Availability to work evenings and weekends as required.
* A genuine interest in showcasing the local region and working with regional producers and communities.
