This is one of those places. A high-volume, well-loved venue that's been part of Sydney's dining landscape for decades. Known for its bold, modern Asian menu and exceptional consistency, this is the kind of restaurant that families, friends, and business diners return to repeatedly.
It's an upmarket venue with strong systems in place, a stable team, and a steady trade. The focus now is on continuing to evolve the kitchen by refining processes, building consistency, and strengthening leadership across the team.
They're now looking for a Head Chef who can bring structure, support, and calm leadership to an already busy and respected kitchen.
The Role
This is a hands-on role in a high-output kitchen. The food offering is built around strong, bold flavours. Think modern Asian with a core menu focused on wok-cooked dishes and curries. The team includes long-serving chefs with deep technical knowledge and newer members who are eager to grow.
The business is investing in better systems and stronger foundations, including improved prep flow, rostering, team development, and training plans. Your role will be to guide that evolution by working alongside the owners and the kitchen team to bring greater clarity, structure, and consistency to daily operations.
What You'll Be Doing
* Leading a large, high-volume kitchen with both à la carte and banquet service
* Overseeing daily operations while ensuring quality, consistency, and organisation
* Supporting a multicultural, multi-generational team; building confidence, skill, and pride
* Improving processes around prep, stock, waste, and cost control
* Collaborating with the owners on seasonal dishes, new menu ideas, and future planning
* Helping grow the team into a more stable, full-time brigade
* Supporting upcoming initiatives like a new snack/bar menu
What We're Looking For
* Proven experience in high-volume, upmarket kitchens
* Strong background in modern Asian cuisine, especially wok and curry-based menus
* A calm, clear leadership style. Hands-on, consistent, and supportive
* Comfortable with team structure, systems, and communication
* Able to work collaboratively with ownership and other departments
* Someone who values training, mentorship, and a team-first approach
