The JJ Unit Trust No. 1, trading as Longboard Bar and Grill, is a lively beachfront venue situated along The Strand in Townsville, QLD. Offering breathtaking ocean views, fresh seafood, gourmet burgers, and signature cocktails, Longboard has built a strong reputation as a top destination for locals and visitors alike. Longboard Bar and Grill is seeking experienced Chefs to join its culinary team in full‑time roles.
The successful candidates will drive end‑to‑end kitchen operations with a strong emphasis on quality execution, workforce leadership, and operational resilience. This role requires hands‑on culinary capability, sound technical expertise across prep, service and production, and the ability to mentor and uplift a diverse brigade. These positions offer a competitive salary ranging from 70‑80K AUD per annum plus superannuation, with remuneration negotiable based on experience and suitability.
Scope of the role
- Lead the team to facilitate the smooth operation of the kitchen in accordance with company standards.
- Oversee the preparation, cooking, and presentation of all culinary offerings, ensuring every dish across menus and daily specials is executed to consistently exceptional standards and showcases creativity and quality.
- Execute menu items consistently to standard, ensuring quality, portion control, and timely preparation in line with kitchen expectations.
- Collaborate with the Head Chef to uphold the consistent delivery of service standards.
- Accurately forecast, conduct monthly inventories, and manage the ordering and stock control of food supplies to ensure uninterrupted kitchen operations and cost‑effective resource utilisation.
- Aid in the oversight of food expenses and waste management.
- Analyse recipes to assign menu item prices based on food, labour, and overhead costs.
- Determine production schedules and staff requirements necessary to ensure the timely delivery of services.
- Supervise cooks and assist Head Chefs in preparing food and helping other team members when needed.
- Inspect supplies, equipment, and work areas to ensure conformance to established standards.
- Train junior staff to uphold the standard of the venue and maintain operational efficiency.
- Regularly demonstrate innovative cooking techniques and the use of modern kitchen equipment to staff, while keeping them informed of ongoing culinary trends and continuous improvements.
- Liaise with front‑of‑house staff to streamline service delivery and maintain seamless coordination between kitchen and dining operations.
- Oversee and enforce strict compliance with food safety, sanitation, and occupational health and safety regulations, ensuring all kitchen operations meet mandatory standards.
Requirements
- Certificates III & IV in Commercial Cookery from Australia
- Have at least 2 years of work experience as a Chef in a similar cuisine
- Positive knowledge of occupational health and safety (WHS) and HACCP.
- Ability to work in a team.
- Excellent communication skills.
- Be willing to relocate if you are interstate or in other cities.
