About the Role
Castle Estate Food Co is looking for experienced Meat process Worker (Slaughter, Meat Boners & Slicers, Offal Separator and Meat Packer) to join our production team in Camperdown and Koallah. We specialize in premium small stock, including lambs, kangaroo, and venison.
You will be part of a professional team of boners responsible for preparing carcasses for further processing and retail-ready packaging.
Key Duties and Responsibilities
* Stunning and killing livestock, followed by carcass preparation including the removal of internal organs and hides.
* Managing switching controls to move carcasses and primal cuts from supply rails down to boning stations.
* Utilizing precision knife skills to separate meat, fat, and connective tissue from the bone.
* Cleaning and refining meat by washing, scraping, and trimming away foreign material or blood.
* Breaking down sides and quarters into standard cuts like rumps, flanks, and shoulders while removing bruises, blood clots, and excess fat for retail readiness.
* Operating specialized equipment for restraining and stunning livestock.
* Executing the severing of jugular veins on stunned animals to ensure proper drainage and dressing.
* Removing head meat and severing animal heads during the initial processing phase.
* Performing the slitting, evisceration, and detailed trimming of animal carcasses.
* Conducting livestock slaughter in strict accordance with specific religious customs and protocols.
Skills
* Demonstrated experience in high-volume abattoir or slaughterhouse environments.
* Expert knife sharpening and handling skills with a focus on safety and speed.
* Physical capability to handle heavy carcasses and work in temperature-controlled environments.
* Ability to follow strict animal welfare and food safety (HACCP) regulations.
* Valid driver’s licence and reliable transport to travel to Victorian facility sites.
