Food and Beverage Operations Manager Role
We are seeking a highly experienced and driven Food and Beverage Manager to oversee the resort's full food and beverage operation across all outlets.
Main Responsibilities:
* Manage daily operations of all F&B outlets, including Pebbles Restaurant, Spike Bar, Events, In-Room Dining, and Hotel Breakfast.
* Develop and implement departmental strategies in line with business objectives.
* Lead and manage front-of-house and back-of-house teams, including recruitment, training, rosters, and mentoring.
* Collaborate with chefs to design and update menus based on customer feedback and profitability.
* Drive revenue through promotions, pricing, upselling, and menu engineering.
* Maintain compliance with health and safety, HACCP, WHS, and licensing regulations.
* Monitor quality and conduct customer service evaluations.
* Prepare and manage budgets, financial forecasts, and monthly profit & loss reviews.
* Maintain strong supplier and vendor relationships, including negotiation and quality control.
* Ensure service excellence during day-to-day operations and special events.
Requirements:
* Minimum 3 years' experience in a senior restaurant or food and beverage management role.
* Diploma or higher qualification in Hospitality Management or a related field.
* Strong leadership and team development skills.
* Demonstrated ability to manage high-volume operations across multiple outlets.
* Experience managing budgets, cost control, and P&L.
* In-depth knowledge of WHS, food safety, and hospitality compliance standards.
* Proficiency with POS, reservation, and inventory systems.
* Excellent communication, organisational, and customer service skills.
* Ability to manage crisis situations and solve problems under pressure.
* Current Food Handling Certificate and Responsible Service of Alcohol (RSA) certification – mandatory.
* Must be an Australian citizen, permanent resident, or hold a visa with no work restrictions.
