Located in the picturesque Southern Highlands, Marilo offers an elevated yet approachable dining experience, where fresh, seasonal produce meets expert Asian cooking techniques.
About the Role:
As Sous Chef, you will work closely with the Executive Chef to lead kitchen operations, maintain consistency, and elevate our menu. A strong background in Asian cuisine and wok cooking is essential, as you will be responsible for ensuring authentic flavors, high-quality execution, and smooth service.
Key Responsibilities:
* Assist the Executive Chef in daily kitchen management
* Lead, train, and mentor the kitchen team, ensuring excellence in every dish
* Maintain high standards of food quality, presentation, and efficiency
* Master wok cooking techniques, high-heat control, and speed in service
* Manage stock control, food costs, and supplier relationships
* Ensure compliance with food safety and hygiene regulations
What We're Looking For:
* Proven experience as a Sous Chef or Senior CDP in an Asian cuisine restaurant
* Expert wok skills – heat control, precision, and speed are a must
* Strong leadership and team management abilities
* Passion for fresh, seasonal produce and innovative Asian flavors
* Experience in menu development, cost control, and kitchen efficiency
* Ability to work under pressure in a high‑paced environment
