An exciting opportunity has arisen for an experienced Chef (& FOH Management Couple) to join the team at the 5-star luxury country hotel, Mt William Holdings Pty Ltd, located in the stunning Grampians region of Victoria. Key Responsibilities
* Oversee all aspects of the hotel's kitchen operations, ensuring the consistent delivery of exceptional cuisine
* Deliver 3-course fine dining experiences to a range of guest sizes (4-30), with a revolving menu, while engaging with guests for kitchen and course introductions and presentation each night.
* Handle cafe-style gourmet breakfast menu for in-house guests and lunch options when needed.
* Recruit and manage a team to assist with events catering, weddings and deliver a high-quality product for clients. While engaging in menu and event flow and design.
* Work with front-of-house partner, providing leadership and ensuring the highest standards of customer service
* Collaborate with the management team and Executive Chef consultant to develop and implement innovative menus that showcase the best of local and seasonal produce
* Help maintain and expand the farm produce garden, seasonally incorporating more elements through the kitchen and enhancing the guest experience while reducing costs.
* Maintain a strong focus on cost control, inventory management, and staff development
* Ensure compliance with all relevant health, safety, and food hygiene regulations
* Foster a positive, collaborative, and professional work environment for the entire hotel team
What We're Looking For
* Experience as a Head Chef or talented, ambitious Sous Chef from a high-end restaurant or hotel environment
* Creative plating, ingredient use and delivering exceptional food experiences, yet fit within the Mount William style and brand.
* Proven track record of managing and leading a front-of-house team, with a focus on exceptional customer service
* Has a strong network of hospitality colleagues in Melbourne or regionally who could assist in the execution of bigger events (bar, kitchen, service).
* Strong understanding of food and beverage trends, as well as a passion for using quality, locally sourced ingredients
* Excellent communication and interpersonal skills, with the ability to effectively lead and motivate a team. Hardworking, kind, generous spirit, who is a team player and fits our business culture
* Thorough knowledge of food safety and hygiene regulations
* Relevant qualifications in Hospitality or Culinary Arts
