Komalow Food Bicheno T/A Blue Edge Bakery is seeking a qualified and experienced Full-time Pastrycook.
Salary Range: $70,000 - $80,000 per annum Business Address: 55 Burgess Street, Bicheno, TAS 7215ResponsibilitiesChecking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations.
Prepares pastry and dessert items in accordance with standards established by the Pastry Chef.Meet with the Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance.
Checking the quality of raw materials and weighing ingredientsKneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods.
Measurement and mixing of ingredients and preparing pastry fillings.
Monitoring oven temperatures and product appearance to determine baking times.
Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products.
Glazing buns and pastries, and decorating cakes with cream and icingMaintain complete knowledge of correct maintenance and use of equipment and operating machines which roll and mould dough and cut biscuits.Emptying, cleaning and greasing baking trays, tins and other cooking equipment.
Assist with the development of new designs and recipes.Skills and QualificationsAQF associate degree in baking and pastry arts or similar preferred.
Prior Experience as a Pastry Cook.
Advanced knowledge of traditional pastry baking techniques.Creative ability in designing, decorating, and filling confectionery.Ability to coordinate with other chefs and manage pastry section staff.In-depth knowledge of food industry regulations.Ability to work Full TimeFlexible to work on a rotating roster.Please include a current resume and supporting documents to your application.
