Senior Sous-Chef (High-End Events/Catering)
The Senior Sous Chef at Mi Scusi Food, a high-end Perth-based catering company well-known for sharp execution, bold menus encompassing a mirage of flavours, use of exceptional local and international produce and standout service - will support the Head Chef and Executive Chef in overseeing all day-to-day kitchen operations from our Bayswater kitchen.
The candidate will guarantee excellence in food quality, preparation, and presentation, delivering off-site catering in a variety of locations around the Perth Metro and occasionally, South-West venues (generous travel allowances & incentives in addition).
Mi Scusi runs a fast-paced kitchen, delivering premium food and evet experiences for top-tier weddings, corporate events, and private clients.
This role plays a pivotal part in managing kitchen staff, upholding health and safety protocols, and delivering a consistently high standard of food execution across a variety of event formats. The Sous Chef will contribute to menu development, staff training, and smooth execution of all services, while fostering a professional, organised, and efficient kitchen environment.
Key Responsibilities
1. Assist Head Chef
Support the Head Chef across all facets of kitchen management.
Step into the role during their absence to ensure continued kitchen operations.
2. Food Preparation & Cooking
Lead preparation and execution of food to established quality and presentation standards.
Confidently plan, execute a range of food styles, including canapés, plated meals, shared feasts and more – with 95% of all products handmade in-house.
3. Staff Supervision & Training
Supervise kitchen staff, including line cooks, prep cooks, and kitchen hands.
Mentor junior team members and provide clear direction during service and prep.
Assist with onboarding and practical training of new staff.
4. Menu Development
Collaborate with the Head and Executive Chefs on new menu creation.
Contribute to specials, seasonal menus, and bespoke event offerings.
5. Inventory & Stock Control
Monitor stock levels and ensure timely, high-quality ordering.
Maintain appropriate storage and rotation practices in line with food safety standards.
6. Health, Safety & Compliance
Maintain a clean, safe, and compliant kitchen environment.
Ensure full adherence to food hygiene regulations both on-site and at off-site venues.
7. Customer Satisfaction & Event Delivery
Deliver high-quality food in line with client expectations at off-site catering events.
Assist in transporting, setting up, and managing temporary kitchens, in coordination with the Function Manager or Head Chef.
Troubleshoot in real time to maintain service flow and presentation standards under pressure.
Please note: Candidates will only be considered if they demonstrate a significantly high standard of food execution across multiple service styles, with proven attention to detail in plating, professional conduct, and leadership capability.
Candidate Requirements:
Minimum 3 years experience in a similar role, ideally in high-end catering, events, or fine dining.
Proven excellence in food execution, diverse service styles, and high-volume settings.
Exceptional plating skills and strong attention to detail.
Professionalism, leadership, and the ability to work calmly under pressure.
Valid driver's licence (C-A minimum) and willingness to work off-site in various locations - often requiring own transportation to and from, around Perth metropolitan area.
Ability to work split shifts over week-days and weekends, as necessary.
Current Food Safety and Handling certification (Food Safety Supervisor preferred).
